  • How to prepare
  • Heat two teaspoons of vegetable oil in a pot and put it on the fire, then fry the pieces of meat in it so that it changes color from all sides.
  • Pour the meat pieces into the casserole, and set them aside.
  • Put two teaspoons of vegetable oil in the same pot, put it on the fire, then add the onion, and stir until it turns golden and wilts.
  • We put garlic, ginger, cinnamon, mixed spices, and saffron over the onions, then stir the ingredients until their aroma comes out, then add the meat broth to it.
  • Pour the spice mixture over the meat pieces.
  • Cover the casserole, then put it in the preheated oven at two hundred and ten degrees Celsius for an hour and a half.
  • Put the dates, lemon zest, tomato paste, lemon juice, and honey on top of the meat mixture.
  • Put the casserole back into the oven for twenty minutes.
  • We put the couscous in a serving dish, then pour the meat tagine over it, decorate it with toasted pine nuts, and serve it to our dining table.

Moroccan chicken tagine

  1. One kilogram chicken, skinless, cut into eight pieces.
  2. One hundred and fifty grams, or one medium-sized carrot, cut into thick round slices.
  3. Seventy-five grams, or half a cup of pitted green olives.
  4. Three-quarters of a tablespoon of ground ginger.
  5. Pinch of white pepper.
  6. Two teaspoons of vegetable oil.
  7. Ten small wings of onions.
  8. Four teaspoons of finely chopped parsley.
  9. Four teaspoons of finely chopped coriander leaves.
  10. One hundred and fifty grams, or one medium-sized tomato, peeled and cut into medium-sized cubes.
  11. Cinnamon sticks.
  12. A quarter of a teaspoon of saffron.
  13. Seven hundred and fifty milliliters, or three cups of water.
  14. Two cubes of Maggi chicken broth.

Food Tours in Agadir

  6. Pour the chicken tagine into a serving dish, sprinkle with green olives, and serve it hot on our dining table.
